I’m a serial cheese eater. Pair a great cheese plate with wine then add great company, and a cosy living room and you have a very happy Carol right there. This is the really Danish bit of my personality, I guess. (Hygge!)

So it was quite amusing how, when my husband and I decided to host one of our first dinners with friends from the diplomatic corps at home, I found myself struggling when it comes to putting together a cheese plate.

The struggles of a diplomat’s wife are quite mundane to some, I know. Failing at this won’t start a world war nor turn into a major diplomatic incident. However, to fail at something so minor may kill the perfectionist in me inside.

In fact, I was having a minor panic attack that day. Surely, I would have retained some knowledge from all the diplomatic events I attended as a journalist and later on as a wife? I knew the most popular cheeses. How they taste and their textures. But choosing was a different story and I have a tendency to overthink then just want everything in there.

Beauty + Fashion: Dressing up and getting ready for National Day 2016 (Without Breaking the Bank)

Ah, National Day. Usually the biggest event an Embassy or a Consulate will host for the year. It’s something that a lot of people either enjoy or stress over – depending on your role for that night.

As a diplomatic reporter and later on as a diplomat’s wife, I’ve been attending a whole lot of National Day celebrations and Embassy events from Manila to KL. Too many for me to count at this point – to think I’ve only been in the diplomatic circle for 5 years. (Diplomatic life does mean events left and right)

Such events are usually a good opportunity for a country to share something from home – their food, culture, history, the talent of their people. For us Filipinos, there’s usually a part of the program dedicated to how talented Filipino performers are.

One thing I love about attending diplomatic events is the dressing up that it comes with. I happen to love wearing Filipiniana – all forms of it. From the well-known Terno and Maria Clara down to the clothes worn by the different tribes all over the Philippines. However, one thing about National Dresses/Outfits is that they can cost quite a bit. I’ve had one too many fellow diplowives telling me that dressing up for National means parting with a hefty amount. The fact that it happens annually means you also have a repetitive (big) expense.

Expat Life: On Making Friends and the Struggle for Something of My Own

It’s always a lot harder to do this when you’re older, no? But let me back track a little.

When I first moved to KL with my husband, I would have to admit that while I was looking forward to our new adventure, I found myself feeling sad during the first few months. This is probably the first time I am ever talking about this. But I guess, it’s time.

I was in a different country with no friends, no job to keep me occupied, and nothing to do for the first few months except scour the internet for interior design inspirations and trying to nail down a ‘look’ for our new home. A job that I was even sharing with my husband who also has a passion for interior design and homeware. (A post on this later, I promise)

I won’t say I was homesick as I have always been very capable of adapting to a new place. I didn’t get the urge to hop on a plane back to Manila and I was hell bent on making it through whatever it was that I was feeling.

It’s the first few weeks or months where you have nothing to keep you busy that are the hardest. I was on my phone a lot – a lot more than usual – bugging my closest friends from home and egging them on to tell me about what’s been happening back home. I was in the mall a lot during office hours, window shopping by myself and thinking to myself – for the first time ever – that it would be nice to have a friend around.

Marriage: How we got our dream wedding without breaking the bank

Four things: Lots of research, careful planning, friends and family who love us dearly, and a teeny tiny bit of luck

When my husband proposed on February 2013, we got into planning our wedding right away. We had a theme, a budget in mind, and 8 months to get everything in place. Sounds like a challenge, doesn’t it? But truth be told, wedding planning isn’t as bad and excruciating as some people might think. It was actually a breeze for the both of us. (I didn’t turn into a bridezilla at any point in the planning and even on the wedding day!)

Nope. No bridezilla! Although I did cry on our wedding day – a lot.

With a husband who gets a kick out of planning along with friends and family who were ever so supportive, we got what we always wanted. A very classy (if I may say so myself) and intimate wedding with just our closest family and friends where we were able to talk, laugh, and mingle with everyone which made everything just oh-so special.

Plus, we were also able to go on a honeymoon in Singapore and Bali within the wedding budget! How much did everything cost? Php 250,000 (Conversion rates: MYR1=Php11.04, EUR1=Php51.92, USD1=Php45.69)! Which is basically unheard of in the Manila wedding circuit these days.

In fact, someone who writes for a wedding magazine found out about our wedding, saw the photos, and was eager to write about it for a feature on intimate weddings. However, when I told him how we did everything by ourselves and how much money we saved by not going through planners and all the people in the wedding business, he told me he couldn’t write about it anymore. Why? Because the magazine will lose advertisers. 😛

So I won’t go into detail about everything as this is not a timely wedding guide anymore since it was two years ago. But I hope what you read here will be great advice to anyone who’s in the planning stage! 🙂

Food: Best of the Philippines! Try Our Food in KLCC till Friday!

Filipino food is seriously underrated. Despite living in Malaysia where food is an actual tourist attraction, I have to admit that there are times when I still miss what we have at home.

From our world-famous mangoes, crab paste (which I tend to mix with everything), and down to my favourite Tinola (chicken soup with ginger and chilli leaves), there’s just something about our food that will make you want more. Ours is the next type of food you should be trying before it even becomes too mainstream. 😉

In fact, if Malaysians have their staple breakfast food called Nasi Lemak, we Filipinos are proud of our -Silog meals! Which I should talk about on a different post so as not to veer off the topic for this one. But if you ever find yourself in Laguna Restaurant in KL or Merienda de Eva in Damansara, order yourself a Tapsilog and thank me later.

If you’re currently in Kuala Lumpur, please do drop by the Food and Hotel Malaysia 2015 expo and visit us! The Philippine Pavilion is located at Hall 1, booth 1111.

We have mangoes, chili sauces and dips (which left my Malaysian friends wanting more and wondering why they are not available here!), sweets like polvoron, and as well as healthy juices and cooking aids – calamansi juice and coconut vinegar, anyone?

Side note: That coconut vinegar makes an awesome chip-dip!

Business owners and food importers are also welcome to ask for details on how you can bring our products here in Malaysia.

Yet another super easy recipe coming your way just in time for cherry season, my loves!

Baking is therapeutic. It is also a great way to impress people around you with your ‘domestic diva’ skills and make them think you’re like the best diplomat’s wife ever when in fact, you’ve only exerted a wee bit of effort. Haha! I do admit to them later on that baking is easy-peasy. You just have to get yourself into the kitchen, drop the fear that you might blow up your whole building, and dive right in. It takes a lot of time but it’s definitely fun and worth it. 😉

I haven’t been baking for quite a while since my husband and I have been so busy. I was actually looking for an excuse to bake something just so I can make some desserts and disrupt his dieting. 😛

Events + Photos: Oh My India! A Journey Around India Through Her Many Dance Traditions

A few weeks ago, my husband and I found ourselves with (awesome) seats to a dance showcase that I’ve been looking forward to for quite a while. When my good friend Thana mentioned earlier that he’s been studying traditional Indian dance and added that he will be inviting Alvin and I to their showcase – naturally – I was extremely excited. Theirs is one of the most fascinating and colourful cultures I have ever encountered so I definitely had to see this show.

India – the most populous democracy, the land of Ghandi, where the Taj Mahal is located, Bollywood land, Hinduism’s homecourt, and the birthplace of Karma and Kama Sutra. And while I’m sure the last bit totally got your attention, I have to admit that my favourites are actually these two: Indian food and their art! Indian food in Malaysia is one of the reasons (Three words: Chicken Tikka Masala) I have to go to the gym and their art forms – from visuals to performances, to wearables – always leave me in awe.

I have been bugging my friends of Indian heritage to bring me along to any of their celebrations just so I can wear a saree. That’s how eager I am. Haha!

Oh My India, was an event that highlighted 10 of the dances found in the country’s different states. It’s a great way of peeking into the culture, religion, and lore that’s so unique and captivating. The event was held in Black Box in Publika and lasted for about 2 hours which, in my opinion, went by quite fast. I actually wanted to see more! 🙁

Career Girl Cooking Series: ‘Malaysianised’ Pasta Dishes!

This weekend, our Muslim brothers and sisters will be celebrating Eid al-Fitr (Hari Raya) or the end of the Ramadan season. It’s going to be a huge celebration among families here in Malaysia. Being ‘that’ kind of foreigner who tries to immerse herself in different cultures to the point of either looking silly or too eager, I found myself quite excited for this year’s Hari Raya.

Last year – only a few weeks after our arrival here in KL – we were invited to a couple of open house celebrations which were the cause of major weight gain for us. Food in Malaysia is just too good and hard to pass up so I’ve been working out to get ready for this year’s celebrations! 😉 (But really, eating more should not be your motivation in working out! Don’t be like me! Haha!)

I even found myself thinking as to what should I be cooking for Alvin and I this long weekend. I think it’s a great excuse for me to get myself back in the kitchen and enhance my cooking skills. 😉 While I am not confident that I can make Nasi Lemak from scratch yet, I can truly say that I can impress my husband by making pasta – my field of expertise. But for Raya, I shall be Malaysianizing (is that a word?) my usual pasta dishes!

Thanks to San Remo for teaching me some new recipes btw. They invited me to an event a while back where there was a cooking demo and some tips on how to make pasta that’s perfect for the Asian tastebuds. We even had a cooking challenge wherein the people who attended the event were divided into groups and were tasked to create their own, Asian pasta dish. That was a lot of fun!

I will be sharing with you two recipes! One that was shown to us during the event and another which is in the cook book they gave us and have already tried myself a couple of weeks back. They are super easy and they take very little time to prepare!

A cooking event I attended earlier today reminded me that I haven’t been posting much about my cooking. So I decided to just share with you guys this quickie post on one of my favourite types of comfort food. Almost effortless to make and so yummy!

I made this for my husband back when we first got our electric oven. So yes, this post should have gone up months and months ago but it ended up in the bowels of my file folders. 😛 Some of the photos even got lost that’s why I only have two to share. Here I go again, justifying the lateness of this post. Sorry. 🙁

I actually saw this recipe while watching a cooking show back when I was in college. I think this is a really easy dish to make and can even be served to your guests if you plan to entertain at home. So, without further ado, (and so I can go to bed since I have a long day tomorrow) here’s the recipe which I’ve continuously modified through the years:

Ingredients:

  • 2 large potatoes
  • 2 tbs butter
  • A dash of salt
  • 2 cloves of garlic, diced (or if you have garlic powder, use 2 tsp)
  • 1 tbs sour cream / creme fraiche
  • 1/4 C parmesan cheese
  • 1 C Irish cheddar cheese
  • 1/4 C milk
  • 1/4 tsp pepper (for the mixture, not for rubbing the skin prior to baking)
  • 4 strips of streaky bacon, diced into bits and fried to a crisp
